11" diameter banneton for proofing a 3 lb. loaf (7-8 cups of flour.) A banneton, or proofing basket provides structure for breads with a wet dough such as sourdough. The natural cane of the banneton also wicks away extra moisture from the surface, improving the crust. Sprinkle a generous coating of flour on the bottom of the basket before placing dough in it for easier removal before baking.
