12" x 5.5" Banneton
This 12" x 5.5" oval banneton, or proofing basket, will accommodate dough for a 2 lb. loaf (4-5 cups of flour.) Use the banneton for the final rise to provide structure for bread dough and then transfer to a flat surface for baking. The natural cane of the banneton also wicks away extra moisture from the surface, improving the crust. Sprinkle a generous coating of flour on the bottom of the basket before placing dough in it for easier removal before baking.
