This 13x4 covered pullman loaf pan produces a firm; close-grained loaf of sandwich bread with a thin; golden crust ( pain de mie ) . The cover keeps air from touching the dough while rising and baking and results in an almost crustless loaf of bread. The dough will be compressed to create a tight-grained texture; perfect for canapes and simple sandwiches like PB&Js and grilled cheese.
