This 9x4x4 covered pullman loaf .pan produces a firm; close-grained loaf of sandwich bread with a thin; golden crust ( pain de mie ) . The cover keeps air from touching the dough while rising and baking and results in an almost crustless loaf of bread. The cover also compresses the dough to create a tight-grained texture; perfect for canapes and simple sandwiches like PB&Js and grilled cheese. The pullman loaf pan with cover is also useful for molded desserts; pates; and terrines. This Pullman pan is aluminized steel with a unique textured surface that helps circulate air for even baking.
