Pastry brushes come in a wide variety of materials. You can have a wood handle with boar's bristles or a silicone pastry brush with silicone bristles that won't retain oil. There are wide and narrow brushes with wood or stainless or silicone handles.
When using a natural pastry brush, you must make sure that you get all the oil out when you clean it. Oil can go rancid and ruin your brush. We recommend Dawn dishwashing detergent as that is the best grease cutter.
