This is to allow heat to circulate evenly. You heat up the pan; pour in melted butter and then the batter. The results are a crusty; buttery outside with a soft; rich center. This dish can turn a mediocre meal into a spectacular one. Especially since the ingredients are ones you always have on hand. This pan also works well for deep Yorkshire puddings.
