Carving or slicing knives are thinner and sometimes flexible, allowing for a thinner more precise slice of meat. These knives work well on roasts, hams, fish, and turkeys! They come in 8 & 10 inch sizes. An 8 inch carver or slicer can double as a utility or butcher knife. But, if you cook large pieces of meat often, you should invest in a 10 inch carver & have the real tool for the job. When you are slicing that standing rib roast with your longest steak knife, you will wish you had gotten one of these.
